When I was in high school my Mum went over to some family friends for dinner and for dessert they were served brownies. This would have to be, without a doubt, the best brownie recipe I have ever used.
This recipe is high in sugar and trust me I have tried using less (almost half) with disastrous results. This one you have to stick to the full amount to get the gorgeous crust on the top but also the chewiness that you are after. If you want it to be a bit gooey then cook for less.
2 cups caster sugar
1 tsp vanilla extract
1 cup plain flour sifted
3/4 cup of cocoa
150 grams melted butter
Beat the eggs and sugar together and then add the vanilla. Sift in the flour and cocoa and then add the butter. Stir just to combine the ingredients. Pour into a greased brownie tin and place into a preheated oven at 150 degrees/140 for fan forced. Cook for 17-20 minutes depending on the consistency you like but also how hot your oven is. Mine is hot so has to come out at 17 on the dot. If you are unsure look for a little bit of a wobble in the middle if you want it to be gooey still. Serve warm for afternoon tea or for a dessert with some chocolate sauce and strawberries.
