On any given day, pavlova is a treasured and quintessential Australian dessert. And for a day like Australia day nothing else will do.

I used to do what most people do and buy the ones at the shops, until a few years ago when I decided to give it a go and try to make my own. I think I had been scared to make one to be honest…and I have no idea why. I just assumed they were really hard to make. And how wrong I was.

The recipe that I use is the fabulous Donna Hay Pavlova recipe. It is without a doubt the best pavlova. It is quick, simple, easy to follow and works a treat. This doesn’t even last the end of the meal before it is demolished…literally. It is delicious topped with berries or another version would be mango, kiwi, peach and passionfruit. You can simply whip the cream or add a teaspoon of sugar for added sweetness, if you have a sweet tooth like yours truly.
